  • ½ cup Medjool dates

  • ½ cup Almonds (crushed)

  • ½ cup Mixed seeds (chia/sunflower/flax/sesame)

  • ¼ cup Cranberries & blueberries (dried)

  • ¼ cup Peanut butter (unsweetened, creamy)

  • ¼ cup Honey/Dates Syrup

  • 1 tsp Cinnamon Powder

Prep time: 20 minutes Serving: 10 Bars Calories: 380kcal/serving

Pre-preparation:

Oats- Slightly roasted, Dates- De-seed & mash or blend in mixer, Almonds- crushed

Method:

1. Gather all the ingredients. Then, mix the Oats, Dates, Almonds, Seeds, Dried Fruits and Honey in a large bowl.

2. Melt the peanut butter in a saucepan over medium heat before mixing in with the above mixture.

3. Mix all the ingredients thoroughly and transfer it to a rectangular/square cake pan that is lined with baking paper.

4. Press it down as firmly as possible. This step is important – it will prevent the bars from falling apart.

5. Cover with plastic wrap and place in the fridge overnight or for 2-3 hours. Then, cut and store in an airtight container.

Notes:

- Although not ideal, if your dates don’t feel sticky and moist, you can soak them in water for 10 minutes then drain before processing.
