Gluten-Free Zucchini Muffin Recipe

Muffins are a great snack to enjoy with a cup of Tea or Milk. However, the amount of sugar and oil found in most muffin recipes puts them firmly in the junk food category. But a healthy & delicious muffin treat can be easily made with few substitutions.


You must be wondering 'Zucchini in a muffin'? Well, I have tried & tasted these muffins and it turns out that Zucchini does taste really delicious & also makes the muffins slightly chewy and not very dense.


This recipe is gluten-free and is made with whole-grain oats and contain no refined sugar and no flour. Enjoy as many as you want because these muffins are irresistible & healthy too.


INGREDIENTS:

  • 2 ½ cups Oats (powdered)

  • 1 cup grated Zucchini

  • 2 large eggs

  • 1/3 cup honey

  • 1/4 cup coconut oil

  • 3/4 cup milk

  • 1/4 cup walnuts (chopped)

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 tsp cinnamon powder

  • 1 tsp Vanilla essence

  • 1/4 cup Brown Sugar/Coconut Sugar (Optional)

Prep time: 15 min Bake Time: 20-23 min Total time: 35 min

Calories: 177 kcal/muffin Serving: 12 Muffins


INSTRUCTIONS:

  1. Preheat oven to 180° C. Grease muffin tin with coconut oil or line with liners. Set aside.

  2. Grate the zucchini and gently squeeze out excess moisture.

  3. In a large bowl beat the eggs, honey, coconut oil, milk, and vanilla.

  4. In another bowl, combine the oats, baking powder, baking soda, salt, cinnamon powder & Brown sugar (optional). Now, add the grated zucchini & mix to combine.

  5. Add dry ingredients to wet ingredients and mix until just incorporated. Do not over-mix.

  6. Fold in 1/4 cup of walnuts and transfer the mixture into the muffin tray evenly.

  7. Sprinkle with Oats and cinnamon powder if desired.

  8. Bake at 180°C for 20 -23 minutes (or until a toothpick inserted into a muffin comes out clean)

SUBSTITUTIONS & VARIATIONS:


  1. Choco chips, Blueberries or any nuts of your choice can be added

  2. 1/4 cup of Coconut Sugar or Brown Sugar can be added if you have a sweet tooth

  3. Non-dairy milk/Plant based milk can be substituted for cow milk
