Easy Banana Pancake Recipe

Pancakes are perfect for lazy weekends or Sunday Brunch. There’s no refined flour, no butter, no sugar or any kind of artificial flavors or sweeteners added. Which means these pancakes are made for anyone, including kids!


Banana pancakes also happen to be an awesome post-workout breakfast because they’re packed with healthy complex carbs and protein. But let's not get more into these interesting facts and jump to the recipe right away because it's lazy morning right?


INGREDIENTS:

  • 1 cup Oats or Wheat flour

  • ½ cup mashed ripe banana

  • ½ teaspoon cinnamon powder

  • ⅔ cup milk

  • 1 large egg

  • 2 tablespoons honey

  • 1 tablespoons ghee or coconut oil

  • Salt to taste

  • Optional toppings: sliced banana, honey, peanut butter

Total time: 20 min (Prep time: 10 min & Cook time 10 min) Serving: 2 (6-7 pancakes)

METHOD:

  1. In a medium bowl, combine the Oats or flour, cinnamon powder and salt. Whisk to blend.

  2. In a smaller bowl, combine the milk, mashed banana, egg, honey. Whisk until blended. Pour the liquid mixture into the flour mixture and mix until combined.

  3. Heat the non-stick pan over medium-low heat. If necessary, lightly oil the cooking surface with additional ghee or coconut oil.

  4. Pour the batter and flip the pancakes, then cook until lightly golden on both sides.

5. Serve immediately. If desired, top individual servings with a spread of peanut butter, sliced bananas, and serve with more honey on the side.
