HEALTHY BROCCOLI SOUP RECIPE

Broccoli is high in many nutrients, including fiber, vitamin C, vitamin K, iron, and potassium. This is a low-calorie vegetable, so weight watchers, heart patients & diabetics can add this healthy broccoli soup recipe to their diet.


Try this healthy soup alongside grilled sandwiches or as a starter for a simple dinner.


INGREDIENTS (Serves 2):


Ø 1 cup Broccoli florets

Ø 1 tsp Oil

Ø ½ cup Onion (chopped)

Ø 1 tsp Garlic (chopped)

Ø ½ cup Milk (Dairy or Plant)

Ø Salt (to taste)

Ø 1 tsp Pepper

Ø Thyme or Oregano (optional)


Calories: 95 kcal/serving

METHOD:


1. Heat the oil in a deep non-stick pan, add onion, garlic & sauté till the onion turns translucent.


2. Add Broccoli florets & 1 ½ cups of water, mix well. Cover with a lid & cook for 3-4 minutes.


3. Once it is cooled, blend the mixture to a smooth puree.


4. Transfer the puree back to the same non-stick pan, add milk, salt & pepper. Mix well & bring it to boil. Add herbs if required.



5. Serve the soup hot!!
